"Produced with the same base wine as the regular Crémant, the 2015 Crémant du Jura Indigène (disgorged in April 2017) has a much more expressive and open nose, more aromatic and very different from the normal brut. This is fermented with natural yeasts, and they used vin de paille to make the second fermentation in bottle, some must and some fermented vin de paille, which certainly give a hint of raisins to the nose. The palate is very dry (extra brut) and had a touch of the vin de paille. Completely different. Tissot told me he'd like to make more of this wine, but it's not easy to produce it, and the vin de paille is expensive and scarce to start with... 7,000 bottles produced.

Stéphane Tissot works 50 hectares of vineyards, which makes him one of the largest vineyard owners in Jura. 2014 is a very different millésime, but it is one that he likes very much, a year with very good freshness, fresher and cooler, a little more austere and mineral than 2016. 2015 is riper and more powerful.

We tasted at 100 mph, the speed at which Tissot talks, in English or in French, and the excursion through the portfolio was fascinating. Tissot is at the head of this game. One of the most important names in Jura."
