The Cotat family have been vignerons in Chavignol (also famous for its goats cheese) since the 1940s. When the two brothers, Paul and Francis, retired in the 1990s, they passed their share of the domaine's vines over to their sons, Francois and Pascal, respectively.

Thus today, François continues on with his share of the tiny family domaine, roughly one hectare each on Les Culs de Beaujeu, Les Monts Damnes and La Grande Cote. Such is the steepness of these slopes that cultivation must be done entirely by hand. The soils in Chavignol share the same Kimmeridgian limestone as Chablis - this "terre blanche" imparts a steely, mineral-rich backbone to its wines.

As regards winemaking, Francois uses a very traditional, non-interventionist approach. There is no fining, no filtration and some very old wood. Sulphur is added only once, just before bottling as Francois doesn't believe in sulphur-free winemaking. Along with this non-interventionist approach, the domaine is essentially organic but it stops short of certification.
