"I first met owner-winemaker Brian Bicknell almost 15 years ago, when he was making the wines at Seresin Estate. His own label now takes up all of his time, but quantities remain small. Bicknell works with seven different vineyard sites, crafting some blended wines and some single-vineyard bottlings. He makes no secret of his preferences. "I love white Burgundy. Subtle up front with a long finish," he said during my January visit. The single-vineyard wines tend to see more oak (although only a small portion is new) and wild ferments. "We're really happy with '18," he said. "Seventeen was harder—we sold a lot off as bulk.""
